
Seared Albacore with Everything Bagel Crust
The albacore bite was on about 40 miles offshore, and my son jumped at the chance to run out. Most of the fish weighed around 30 pounds!!! By the time he got back, coolers were packed, and the real work began. The backyard transformed into a late-night fillet station, with fillet knives working under the lights and the dog keeping a close watch for scraps that fell to the ground. It went on well past dark, but it feels good, knowing there’s fresh fish for the table and a full freezer to enjoy.
The beauty of bringing fish home is that you get to enjoy some right away and keep experimenting with new ways to cook it long after the trip. Albacore especially lends itself to trying new things, and this albacore dish has quickly become one of our standbys. It sounds a little unusual at first, but it works. The trick is a jar of everything bagel seasoning—salt, sesame, garlic, onion.
What You Need

- Chunk of albacore loin
- Salt and pepper
- Avocado oil
- Everything bagel seasoning
How to Do It
- Season the tuna with salt and pepper, coat it in avocado oil, then roll it in everything bagel seasoning.
- Heat a cast-iron skillet with a touch of oil over medium-high heat.
- Sear for a couple of minutes per side. Do not let the seasoning burn. Aim for slightly undercooked in the center. Overcooked tuna is dry and loses its flavor.
- Let it rest before slicing. If you cut too early, it will not slice cleanly.
Serve plain, over short grain rice, or with a drizzle of Bachan Japanese BBQ sauce. Simple, clean, and it lets the tuna shine.
