Seared Albacore with Everything Bagel Crust
“The best part of bringing fish home is enjoying some right away. Albacore is perfect for that. This dish has quickly become one of our standbys. The secret? A simple jar of everything bagel seasoning.”
The albacore bite was on about 40 miles offshore. Most of the fish we hauled in were right around 30 pounds. That evening, the backyard turned into a late-night fillet station. Knives under the lights, fish on ice, and the dog posted up for anything that hit the ground. It went well past dark.

What You Need
- Fresh albacore tuna loins
- Kosher salt and black pepper
- High-heat cooking oil (Avocado oil works best)
- Everything bagel seasoning
- Finely chopped onion
- Bachan's Japanese BBQ sauce
How It Comes Together
- Season the albacore with salt and pepper, coat lightly in avocado oil, then roll and press thoroughly into the everything bagel seasoning.
- Heat a cast iron skillet with a touch of oil over medium-high heat until hot.
- Sear for 1–2 minutes per side. Keep the center rare/undercooked and be careful not to burn the seeds and garlic in the seasoning.
- Let the seared tuna rest for 2 to 3 minutes before slicing so it cuts cleanly. Slice against the grain, using long, fluid motions with minimal pressure.
Serve it plain, over warm short-grain rice, or with a light drizzle of Bachan’s Japanese BBQ sauce and chopped green onions. Simple, clean, and lets the quality of the albacore shine.
